The higher I set ‘Concurrent Tasks’, the higher the chance of network errors. After Effects gives plugin errors at about 4 tasks and Maya gives .mb file access errors at about 6 tasks. Is there any limits I need to know about within Deadline itself, or is this an OS problem?

The problem is likely your network, or the server that the projects, scene files, and assets reside on. Each concurrent task starts up a separate instance of the render application, and that application needs to load the scene file and its assets (textures, caches, etc) over the network. With AE, if you have 4 concurrent tasks multiplied by 8 nodes, you have 32 instances pulling those resources. If the server those resources are on or the network can’t handle that load, that could explain the problems you’re seeing.
