Apologies if this is a blindingly obvious question, but I can’t find an answer.

I wish to customize the Maya submitter such that my output render path always points to a different drive. Could someone please advise where to make this change? The SubmitMayaToDeadline.mel script?

I assume you would like to set a default here.

That script is the integrated submitter, so changes would need to be made there.

After doing some digging, the Plugin Info property that controls the output location is “OutputFilePath”. It looks like at the moment that is only used within the Monitor submitter, so for the time being the only way to control the output path is to modify your render output within Maya itself.
