Would be great to be able to use region of interest only in the viewport, and render the whole mesh.

Are you running the latest build?
It has separate checkboxes for Render and Viewport, so you can do either.
The old checkbox can also be used to check/uncheck both at once for speed.
Looks like we’re a bit behind then, I’ll check.
